  1. Preheat your oven to 325°F (160°C).
  2. In a bowl, mix graham cracker crumbs and melted butter until combined. Press into the bottom of a 9-inch springform pan.
  3. In a large mixing bowl, beat cream cheese until smooth. Gradually add sugar and vanilla, mixing until well combined.
  4. Add eggs one at a time, mixing on low speed until just blended. Do not overmix.
  5. Stir in sour cream and flour until smooth.
  6. Pour the cream cheese mixture over the crust in the springform pan.
  7. Bake for 55-60 minutes, or until the center is set and the edges are lightly browned.
  8. Turn off the oven and let the cheesecake cool in the oven with the door ajar for 1 hour.
  9. Refrigerate for at least 4 hours before serving.
